High West
Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to a whiskey distillery in Kentucky. In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history. High West began with humble roots, opening a small, 250-gallon still and Saloon in an historic livery stable and garage. What was once a small operation in downtown Park City has grown to be an internationally-recognized, award winning brand.

High West American Praire Bourbon
High West American Prairie Bourbon Barrel Select Whiskey is a distinctive, limited-release, barrel-finished version of High West whiskey in hand-numbered whiskey bottles. Specially selected batches of bourbon-aged whiskey are finished in second-use barrels for an additional period of time, ranging from six months to two years, before being bottled. The finishing barrel for this High West is brandy. This secondary barrel-aging process adds a sophisticated layer of complexity and depth of flavor to an American whiskey that is aromatic, rich, and earthy, featuring well-balanced flavors of candy corn, honey nougat and sweet cornbread biscuits, with a finish of vanilla and caramel apple.
This 750 mL bottle of whiskey helps preserve the west; High West supports the American Prairie Reserve and is working to raise awareness of this fantastic cause. To fully appreciate this barrel whiskey's additional complexity, enjoy this whiskey neat or with a splash of water in a rocks whiskey glass.
