“Unicorn Chato” Blanco Tequila

Caballito Cerrero Chato Blanco is a highly regarded artisanal agave spirit produced by the Caballito Cerrero distillery in Amatitán, Jalisco — the heartland of tequila. However, it’s not legally labeled as tequila, even though it’s made in the same region and using traditional methods, because the producers chose to opt out of the Tequila Denomination of Origin to maintain independence from industrial regulations.

The Jiménez family has been producing agave spirits since 1950 and were originally tied to the La Alteña distillery (El Tesoro). Caballito Cerrero was founded in 1959, and the brand name means “the unshod horse” — symbolizing independence and freedom from industrial tequila constraints.

They produce small batches using multiple agave types (such as Azul, Chato, and others), each expressing a distinct terroir-driven character.

The “Unicorn Chato” is a limited-edition/one-off release from Caballito Cerrero, made from the rare agave variety Agave angustifolia ‘Chato’ (commonly called “Chato”).
