The Empyrean II Bourbon

The Empyrean II is a union of bourbon aged in both red port and white port casks.

A 7.5 year old, 111.36 proof cask strength, 60% Corn, 36% Rye, 4% malted barley bourbon is finished separately and blended in secret to create a whiskey of uncommon depth and intensity.

One brings bright fruit and floral light; the other, deep sweetness and shadows. Together, they smolder.

Tasting Notes

NOSE Bright and expressive, opening with orchard blossoms and freshly cut fruit before unfolding into raspberry thumbprint cookies and warm shortbread fresh from the oven. Soft pastry sweetness and delicate florals linger beneath the surface, inviting another pass.

PALATE Waves of ripe red fruit and honeyed jam preserves arrive first, layered with baking spice and gentle oak. Richly coating and luxuriously textured, it rolls across the palate with a seamless balance of sweetness, spice, and structure, lifted by subtle floral tones.

FINISH Long, warm, and quietly indulgent. Baking spice lingers as the fruit deepens toward plum and fig, with soft oak and fading sweetness carrying through the final moments.
