Siembra Valles Ancestral is a small-batch, ultra-traditional blanco tequila produced at the Cascahuín Distillery (NOM 1123) in Jalisco. Designed to recreate the flavor profiles of the 18th century, it is often described as "tequila made like mezcal" due to its rare, labor-intensive production methods.
- Agave Harvesting: Uses 100% Blue Weber agave, including bat-pollinated plants to promote genetic diversity.
- Earthen Pit Roasting: Agave hearts are roasted in a 6-foot deep earthen pit oven for over 100 hours, a practice nearly extinct in modern tequila.
- Hand Maceration: Unlike most tequilas crushed by machines or stones, this agave is macerated by hand using large wooden mallets in a wooden trough.
- Unique Distillation: It undergoes double distillation—first in a copper pot still, then in a rare pine wood "Filipino-style" still, which adds subtle woody notes.
- Resting: The final distillate is rested in glass carboys (demijohns) sealed with corn cobs to allow slow, natural stabilization.
